The Super Bowl is upon us. It is a time for friends, football, and food. The problem with Super Bowl foods are the calories. Pizza, wings, and dip are not the best options.

So, for the third year in a row, we have decided to compile a list of our favorite foods that will save you some calories and add some nutrients into your Super Bowl Sunday. We are going to break them down into snacks, appetizers, and main dishes. So, lets snap to it and get cooking.

Super Bowl Snacks

Chili Popcorn (1 Batch) Davenport Chiropractor Chili Popcorn Recipe

  • 2 Tbsp Oil
  • 1 Tsp Chili Powder
  • 1 C Uncooked Popcorn
In a quart pan, heat the oil over medium to high heat and stir in the chili powder. Add the popcorn and cook until the kernels pop. The beauty of this recipe, is that the chili powder sticks to the kernels as they pop. You can adjust the amount of seasoning to your own preference. You can also adjust the flavor with ranch seasoning.

Prosciutto & Cheese Roll Ups Davenport Chiropractor Prosciutto and Cheese Rolls

  • 1 lb Prosciutto
  • 12 Cheese Sticks
This one is easy. You can easily substitute any thinly sliced meat or cheese for this snack. I find that cheese sticks work best due to the round nature. Simply cut the cheese sticks into thirds and wrap a piece of prosciutto around it. Stick a toothpick in it and place on a lined baking dish. Broil for approximately 1 minute, or until brown.

Super Bowl Appetizers

Avocado Deviled Eggs

  • 2 Avocadoes
  • 12 Eggs
  • 1/2 Lemon (Juiced)
  • 1 Tsp Salt
  • 1/2 Onion (Chopped)
  • Pepper To Taste
  • 1/4 C Dijon Mustard
The worst part about devilled eggs is that there is about a jar of mayonnaise in them. In this recipe, we are replacing the fat in mayonnaise with the fat from an avocado. You get the same creamy texture with more nutrients and healthier fats.
Boil your dozen eggs for 15 to 20 minutes until the center is firm. While you are doing that, chop the onion and mix with the avocado, lemon juice, mustard, salt, and pepper. When the eggs are done, peel them and cut them in half. Remove the yolks and add them to the avocado mixture. Mix until smooth. Place the mixture into a plastic bag and cut off the corner. Pipe the mixture back onto the halved eggs. Top with a sprig of cilantro for freshness if you want!

Bacon Wrapped Asparagus

  • 1 lbs Bacon
  • 2 lbs Asparagus
These are delicious. Remove the bacon from the wrapper and cut the strips in half. Cut the woody root off of the asparagus and rinse well. Wrap each piece of asparagus with a half piece of bacon. You can either bake or grill the combined bacon and asparagus. If you bake it, set your oven to 350 and bake for 15 to 20 minutes. If you grill, cook over medium to high heat, turning occasionally, until the bacon is cooked (usually 10 to 15 minutes).

Super Bowl Main Dish

Parmesan Meat Balls Davenport Chiropractor Parmesan Meatball Recipe

  • 2 lbs Hamburger
  • 3 Eggs
  • 1 C Parmesan Cheese
  • 2 Tbsp Salt
  • 2 Tbsp Pepper

This one is really easy, combine all of the ingredients into a bowl and mix. Form the meat into 1 inch diameter balls. Bake in the oven at 350 until golden brown. I find that these go well by themselves, or with just a little bit of your favorite barbecue sauce.

  • 2 C Chicken (Shredded)
  • 2 C Rice
  • 2 C Chicken Stock
  • 1 Can Black Beans
  • 1 Can Mexican Style Tomatoes
  • 1 Green Bell Pepper (Chopped)
  • 1 Onion (Chopped)
  • 2 Tbsp Chili Powder
  • 2 Tbsp Olive Oil
  • 1 C Shredded Cheese
Start by sautéing the onion and green pepper with the oil in a pan over medium heat. Add the remaining ingredients and stir until mixed.  Bring to a boil and cover the pan. Reduce heat after 5 minutes and keep the lid on until rice is fully cooked. Once done, add 1 cup of shredded cheese to the top. You can easily put this on a crock pot on warm to serve as the main dish. I also like to use a rotisserie chicken for this as it is pre cooked.
