There are a lot of things at a super bowl party that should either stop our heart or at the very least, put us in the hospital. Believe me, I am more than guilty of eating greasy, fattening, and carb loaded goodness.  So I thought I would offer up a few more healthful options that still taste great.

1. Guacamole –

Vegetables, fruit juice, and a little salt. Where can you go wrong?  Substitute carrots or celery sticks instead of chips to munch on.  You still get the crunch without the carbs and calories.

2 avocados                                          ½ onion chopped                                             2 tomatoes diced

1 lemon juiced                                  1 clove garlic minced                                       1 tsp  salt

Throw it in a bowl and mash it or throw it in a food processor and puree it.

2. Hummus –

Vegetables, herbs, spices, fruit juice. Once again, you can substitute carrots, broccoli florets, or celery sticks instead of chips.

1 can chickpeas, drained and rinsed         1 clove garlic                                       2 tablespoons tahini

1/4 cup fresh parsley leaves                        6 fresh basil leaves                          1 medium scallion, chopped

1 tablespoon chopped fresh dill                  1 teaspoon honey                           1 tablespoon fresh lemon juice

1/8 teaspoon cayenne pepper                   1/4 teaspoon kosher salt              1/3 cup extra-virgin olive oil

Put it in a food processor and blend until smooth.

Time for the main course.   While wings, nachos, and ribs are delicious; a good hearty chili tastes great and it also contains healthy ingredients while still hitting the spot.

Crock-pot Chili

3 can stewed tomatoes (low sodium)                                     2 cans chili beans (drained and rinsed)

1 can pinto beans (drained and rinsed)                                  1 onion chopped

1 bunch celery chopped                                                                                1 package mushrooms chopped

1 large can tomato juice                                                                                Chili powder to taste

1 lb 95% lean ground beef

Brown the ground beef and drain.  Add all ingredients to large Crockpot.  Add chili powder to taste.  Cook on low for 6-8 hours.

It has been cold this winter, but in case it warms up and you want a tailgate feel, I am going to add a grilling option for those that want to brave the cold.

Hawaiian Chicken Grillers

2 boneless skinless chicken breast                           2 slices fresh pineapple with core removed

½ red onion sliced                                                            1 tomato

Fresh mozzarella cheese sliced

Grill chicken breasts, onion, and pineapple slices until chicken is cooked thoroughly, and pineapple and onion are tender.  Place chicken on plate with pineapple, onion, tomato, and cheese on top.
